What to expect
You’ll get the full spectrum of ASADO: roaring fires, big flavours, good people, and laughter. You decide how hands-on you want to be — jump in with both sleeves rolled up, or stand back and savour the feast. Everyone leaves full, inspired, and with a few new tricks in their cooking toolkit.
A typical course will include:
An introduction to fire-cooking gear - how to use what you probably already have, plus what special stuff is worth investing in.
Exploring different woods and how each smoke and fuel type shapes flavour.
Fire setup, control & maintenance - mastering the heat so you can cook confidently.
Cooking techs: direct vs indirect heat, cooking to temperature, how to judge doneness, etc.
Transferable skills & tips so you can replicate what you learn anywhere - at home, at camping, or for your next gathering.

We pack the day full of delicious dishes and techniques, examples of which can include:
Whole lamb a la cruz with salumera basting — dramatic, impressive, unforgettable.
Prime rib of beef cooked to your taste.
Vegetables cooked in the embers (rescaldo) — smoky, tender, full of character.
Dressings & sauces: think chimichurri, saffron Caesar mayo, confit garlic, and more.
Cedar plank salmon, salt-baked fish or chicken — ways to cook that surprise and delight.
Quick-fire party bites. Charred or crispy sides like chapa potatoes.
Breakfast to kick off the day, a seafood lunch to keep things lively, and a final meat feast that leaves you happily satisfied (or rolling into the evening).
